The sun dried tomatoes give your hummus a decise and tasty note, while still being very harmonious on the whole.

Ingredient list for 1 portion
For the hummus
- 50g cooked chickpeas
- 10g (1 tbsp) Extra Virgin Olive Oil
- 10g sun dried tomatoes (not in oil)
- 1 garlic clove
- Half lemon juice
- 2 ice cubes
- 1 tbsp water
- Paprika
For the salad
- 1 small cucumber
- Half Eggplant
- 3-4 yellow datterini tomatoes
- 20g grana padano dop
To be served with a slice of your favorite toast
If you are using dried chickpeas, you will need to pre-cook them (it takes about one and a half day, I will post how to very soon). Otherwise tinned chickpeas will do, but personally I prefer the dried ones as they have no preservatives or other ingredients than just the chickpeas.
Total preparation time: 25 min (+ 30min for the eggplant to rest)
Hummus
- Put the chickpeas in a blender or mixer with the rest of ingredients (the dried tomatoes, the olive oil, garlic, lemon juice, ice cubes and paprika)
- Blend for at least 5 minutes at max power
- Add 1 tbsp of water into the mix and continue to blend until smooth and creamy
- Hummus is ready 😁 Serve it with a drizzle of olive oil and a sprinkle of paprika
Salad
- Cut the eggplant into cubes, let it sit with come grains of salt with a weight on top (put them in a bowl with a pan of water on top) for around 30 min
- Cook the eggplant in the airfryer at 190°C for 15min with a sprinkle of paprika
- Meanwhile, cut the cucumber and the tomatoes and put them in a bowl or a dish
- When eggplant is ready, put it in the bowl with the rest of veggies
- Serve with a drizzle of olive oil, a pinch of salt, and (optional) some drops of lime juice
